STUFFED PEPPERS

Lean turkey is a great low-fat substitute for beef, and this stuffed pepper is filled with nutty flavours and packed with nutrition. You can use brown or white rice depending on your preference, just don’t forget the fresh parsley!

 

Ingredients (Serves 4)

 

· 4 large green bell peppers

· 1 ½ tsp vegetable oil

· 1 medium onion

· 1 clove garlic

· 1 pound ground turkey

· 1 ½ cups cooked brown rice

· 1 can tomato sauce

· 1 tbsp chopped fresh parsley

· 1 tsp salt

· ¼ tsp freshly ground pepper

Cooking

1. Preheat oven to 350 degrees F.

2. Prepare bell peppers by discarding the core and seeds

3. Bring water to a boil in a large pot and blanch the peppers until tender, about 1 minute.

4. Drain and cool under cold running water

5. Heat oil in a pan and cook garlic and onion until softened

6. Add ground turkey until cooked, about 2 minutes

7. Transfer to a medium bowl and mix in rice, 1/2 tomato sauce, parsley and seasoning.

8. Stuff the mixture into each pepper and pour the remaining tomato sauce over.

9. Cover and bake in a casserole dish for 30 mins or until tender.
